Chicken Provencal is a classic French dish that is perfect for any occasion. Chef Wendy gives you her secret on how to prepare the most succulent, delicious Chicken Provencal using fresh ingredients from the farmer’s market.
Ingredients:
4 chicken thighs
1/2 cup of all-purpose flour
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 tablespoons of olive oil
1 onion, chopped
2 garlic cloves, minced
1/2 cup of white wine
1/2 cup of chicken broth
1 tablespoon of tomato paste
1 tablespoon of Herbes de Provence
1 bay leaf
1 cup of cherry tomatoes
Fresh parsley for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Mix the flour, salt, and black pepper in a shallow dish.
Dredge the chicken thighs in the flour mixture.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken thighs and cook until browned on both sides.
Remove the chicken from the skillet and set aside.
Add the onion and garlic to the skillet and cook until softened.
Add the white wine and chicken broth to the skillet and bring to a boil.
Stir in the tomato paste, Herbes de Provence, bay leaf, and cherry tomatoes.
Return the chicken to the skillet and spoon some of the sauce over it.
Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
Remove the lid or aluminum foil and bake for an additional 15 minutes or until the chicken is cooked through.
Garnish with fresh parsley before serving.
